Another Exquisite Dish
Another Takase specialty, Unameshi, is as famous as Kawara Soba. Please enjoy the savory and delicious eel from Kagoshima in Japan gently grilled with a superb sauce. Even more delicious with our carefully selected condiments. Another taste of Unameshi is Unacha. Add wasabi, condiments, pour the hot dashi (broth) over the rice, and then taste the eel and rice together.
Our eels for Unameshi, Unaju, and Kabayaki are from Kagoshima in Japan, with a particular focus on the meat texture, flavor and taste. We carefully selected eels with just the right amount of fat and is always delicious throughout the year.
For eel dishes, we make the sauce based on Tamari soy sauce and add an infusion of soy sauce and mirin (a type of rice wine) with an exquisite balance. The sauce is left for some considerable time and ingredients are added to keep the rich taste and aroma.
With the dashi (broth), the eel meat will soften and the umami spreads through the entire eel. Enjoy its elegant taste by adding some wasabi.
How to Eat
1 With the rice scoop, stir the eel gently into the rice in the wooden
2 Dish up in the rice bowl and taste it.
3 Sprinkle with the condiments and try it.
4 Add wasabi, pour the served dashi (broth), then enjoy Unacha.
